TUNA SALAD IN COLLARD WRAPS

These wraps are very high in important mental health nutrients including protein, calcium, magnesium, folate, selenium, vitamin C, vitamin B-12, and omega-3 fatty acids!

TUNA SALAD IN COLLARD WRAPS

Servings: 2

2 small (5 oz.) cans light tuna packed in water, drained

1 stalk celery, chopped

1/3 c. cucumber, chopped

2 large eggs, hard-boiled and chopped

¼ c. red onion, chopped

½ small yellow pepper, chopped

6 medium raw collard leaves

Mix all ingredients and toss with Honey Mustard Dressing. Place equal parts of mixture on each collard leaf and roll up like a wrap and enjoy!

HONEY MUSTARD DRESSING

1 Tbsp. raw honey

1 Tbsp. sweet and spicy mustard

1 Tbsp. flax oil

1 ½ Tbsp. red wine vinegar

Whisk all ingredients together or shake in a jar.
