This is one of my favorite ways to cook chicken. It is unbelievably moist and flavorful and super easy to make. Prep time is 5-10 minutes. It is a great source of B vitamins, calcium, potassium, and protein, making it a super anti-depressant food!
PARMESAN CHICKEN
Servings: 4
4 medium or 2 large (about 1 1/4 lbs) boneless, skinless chicken breasts
½ c. parmesan cheese, grated
1 c. plain Greek yogurt
1 tsp. garlic powder
½ tsp. smoked paprika
¼ tsp. oregano
¼ tsp. black pepper
¼ tsp. sea salt
Arrange chicken breasts in a shallow baking pan. Mix together remaining ingredients and spread over chicken. Bake at 375 for 40 minutes.
