It’s Pi Day!

OK, it’s not “pie” day, but there’s a little bit of math involved. And if math is as mysterious to you as it is to me sometimes, you will especially appreciate this “Impossible Pie”.

It’s called “Impossible Pie” because it miraculously makes its own top and bottom crust! This has to be the easiest pie in the world to make and is packed full of mental health nutrients like protein, vitamin D, and B vitamins. It is my “go to” recipe for a take-along dessert for potlucks.

This is a dessert you don’t have to feel guilty about!

IMPOSSIBLE PIE

1/2 c. honey

2 c. milk

1 cup unsweetened shredded coconut

4 eggs

1/3 c whole wheat flour (or substitute gluten-free flour)

2 teaspoons vanilla

1/4 c. butter

Put all ingredients in electric blender. Blend 10 seconds. Pour into well oiled 10 inch pie pan. Bake 40-45 minutes at 350 degrees F until the top is nicely browned. Let cool completely before eating. Enjoy!

    Angela, I’m not a fan of the taste or texture of coconut — is there a substitute for it in this recipe??

      Hi Sara! The only thing I could think of would be finely chopped nuts. If you try it, please post your results. I might try it too just for fun!

    Any idea how this would turn out if we skipped honey?
    Unsweetened is okay with me. Would we need to add in some other ingredient in place of honey? A little more milk perhaps?
