This dessert tastes like a major indulgence and is an excellent source of fiber, B vitamins, vitamin C, potassium, and magnesium. You will want to use medjool dates because they are bigger and softer than other types and will blend smoother without leaving little bits in the mousse.
MOCHA MOUSSE
Servings: 2
1 ripe avocado
1 ripe banana (fresh or frozen)
2 Tbsp. raw cacao (or cocoa)
¼ c. espresso or strong brewed coffee
4 medjool dates
1 tsp. vanilla extract
1 Tbsp. maple syrup
Peel and pit avocado. Put avocado and all other ingredients in blender and blend until smooth and creamy. Spoon into 2 dessert glasses and refrigerate until cold – about 30 minutes.
This looks amazing and I cannot wait to try it for myself and to make it for someone who is on a soft foods only diet and can really use a healthy mental health boost right now!
The avocado makes it really creamy and rich and the banana and dates make it sweet but you don’t taste any of those things separately. This is definitely one of my favorite desserts! Let me know how you like it.
